A couple of photos to get us going…
This was another Skinnytaste recipe: Crispy Togarashi Chicken with Sesame Cucumber Relish. As with most of her recipes, the end result is very tasty. This one called for an exotic ingredient–Shichimi Togarashi–at least it was for me. Thankfully a friend had some and shared it with me.
It’s a comparatively healthy dish coming in at approximately 278 calories.
This was less so. This is a take on a Chinese American classic, General Tso’s (Slow Cooker General Tso’s Chicken to be precise). While I have no doubt it’s fewer calories and less fat than you’d get in takeout, it was more along the lines of 540 a serving. Incredibly yummy, but if I make this one again, I think I’d like to try to reduce the calories and sugar content.
I’m plugging along. Some days are really tough. Some days I can stay on plan. It’s been nearly 6 months and that I’m still doing this, well, for me? That’s impressive.
