We have cake!

This, my friends, is a Clementine cake.

Super easy. You start by bringing 3-4 Clementines (375 grams worth) to boil in a sauce pan with some water for 2 hours.

The house smelled amazing.

Then when those are done and cooled, you slice them in half and remove the seeds. They go into a food processor and pulse a few times. Then you add in ground almonds, sugar, baking powder, and eggs (see the link for the amounts) and pulse until mixed.

You add the batter to an 8″ springform pan that has been buttered and lined. The smallest I had was 9″, but it came out fine. And then you bake in a 375F oven for like 50-60 minutes.

And then you have cake!

I liked the texture, light and moist, and really flavorful.

  1. I wonder if the sugar could be substituted for sweetener? What do you think? It looks amazing.

  2. I don’t know how that would work. It might not be a 1-to-1 substitution. A serving is 363 calories, 41g carbs; 19g fat; 12g protein; 73g sodium; and 34 g sugar.
